On the highway for the first time in a few months and I noticed a vibration when going ~100kmh/60mph when getting to a specific RPM (around 2K. I also had a pretty loud hum/buzz at times when doing 120kmh/70mph at around 2400 RPM.

Both could be 'stopped' by giving it more gas or slightly breaking.

I found a "sweet spot" at ~64mph and just set the cruise and avoided the issue for the most part. Any ideas what might be going on?

Since you have an 09 Ody, you already have the updated exhaust pipe A and rubber mount, per TSB 06-050 (Drone or Moan When Driving at 2,100 RPM). Those with 05-06 Odys that had the TSB done, said the noise was less afterwards, but it was still there a little.

What you are experiencing is resonance and the contributing factors are from the exhaust system and the VCM system. It is a normal characteristic of the Ody. I have it on my 08 Touring. I recommend that you continue to do what you are already doing and avoid that resonance point.
