I decided to fix the burnt cloth seats on my cheap odyssey by just replacing the seat covers with leather from junkyard. The seat covers (bottom and backrest) are $7 each, I also got the leather headrest and armrest which totaled to $40. If I buy the whole seat (which is the easiest thing to do) it will cost me $90 because they charge extra for the airbag. I decided to go on a cheaper route since I'm trying to limit my repair budget for this car.

Nice!

I’m curious if anyone knows a source for brand new Odyssey leather seat covers?

I'd like to go the other way. My leather is falling apart from wet bathing suits. Well, it's not real leather anyway. Some kind of plastic.
Parts touching body are all real leather. (other than arm rest and 3rd row seat) IF you got factory leather seats.
I am guessing if it really wasn't leather, it may have faired better against moisture.

the inserts are hard as a rock which in turn made the (bolsters?) seperate from the base and peel off.

the arm rests are not made of leather, they're vinyl and you can just spray paint them if they peel off or crack (in case you run out of options to find a good one) I prefer leather over cloth because if you have kids or family that doesn't clean their cars, leather can last compared to cloth. There are cases where a cloth can't be cleaned anymore when stained. Leather can be dyed.
