Every morning when I first drive off and then apply my brakes I get a slight grinding sound from my rear brakes. Once I've driven a little ways down the road, I don't hear it anymore. The rear brake pads have plenty left on them.

Any ideas?

Are you talking about the "growling" noise that you hear when you first take off? (ABS system testing sound)?

Just want to confirm that you are not mistaking that sound from some brake grinding noise.

As long as there is plenty on the pads left and the brakes are not dragging, you’re fine.

One thing that I do notice is that when I casually break after I've been driving for a minute, everything's fine. If I have to break hard, I hear what sounds like some sort of growling or similar to metal on metal. I'm pretty sure that it is NOT metal on metal though.
