Does anyone know what options there are out there for swapping the stock RES screen for a larger one? My step dad was making noise about a 10" screen...

The LCD panel is made by Sharp Electronics and if you found a larger pin compatible Sharp touch-screen you could probably get it working, but the mounting of a larger display and navi buttons would be a real challenge.
